Mexican Pork and Rice

INGREDIENTS

  • 1 pound pork tenderloin – cut into cubes
  • 1/2 stick chorizo
  • 1 small can tomato paste
  • 1 14 oz can chicken broth
  • 1 15 oz can fire roasted tomatoes (divided 3/4; 1/4)
  • 1 cup rice (or fideo)
  • 1 small onion (divided 1/2 cup; 1/4 cup)
  • 2 cloves garlic
  • chili powder

PORK

  1. Saute pork, chorizo, onion (1/2 cup) and garlic until pork is browned
  2. Stir in tomato paste and chicken broth
  3. Add 3/4 can fire roasted tomatoes
  4. Add chili powder to taste
  5. Bring to boil
  6. Simmer for 45 minutes

RICE

  1. Brown rice in a little oil with 1/4 cup onion
  2. Add 1/4 can fire roasted tomatoes; scraping bottom of pan
  3. Transfer rice to rice cooker and add 1 cup water
