INGREDIENTS
- 1 pound pork tenderloin – cut into cubes
- 1/2 stick chorizo
- 1 small can tomato paste
- 1 14 oz can chicken broth
- 1 15 oz can fire roasted tomatoes (divided 3/4; 1/4)
- 1 cup rice (or fideo)
- 1 small onion (divided 1/2 cup; 1/4 cup)
- 2 cloves garlic
- chili powder
PORK
- Saute pork, chorizo, onion (1/2 cup) and garlic until pork is browned
- Stir in tomato paste and chicken broth
- Add 3/4 can fire roasted tomatoes
- Add chili powder to taste
- Bring to boil
- Simmer for 45 minutes
RICE
- Brown rice in a little oil with 1/4 cup onion
- Add 1/4 can fire roasted tomatoes; scraping bottom of pan
- Transfer rice to rice cooker and add 1 cup water
